Trained in both cooking and pastry at the ITHQ, Raphaël Leclerc-Gileau started out as a dishwasher and later cooked at Bouillon Bilk and Bar George at Le Mount Stephen before becoming chef at Verdun Beach. In 2026 he opened Plume, a French restaurant on Fairmount in Mile End, with sommelier Brigitte Emond Serret, whom he met at Bouillon Bilk.
