Phong Thach opened his first restaurant in 2007 at 2115 Jean-Talon East and later became the chef of Le Red Tiger, the Vietnamese street-food restaurant launched in the Village in 2015. After stepping back from Red Tiger, he returned to that original address in April 2026 with Bistrot Fortune, which pairs Southeast Asian and Latin American flavours.
