An Doan cooked at the Montréal fine-dining restaurant Hiatus and developed her technique partly in Japan. In May 2026 she opened Maison An Omakase on avenue du Parc with co-founder Emily Nguyen Do, pairing Japanese technique with her Vietnamese roots; Tastet calls her Montréal's first female omakase chef.
